    Campfire French Toast with Peanut Butter and Jelly

    This campfire French toast with peanut butter and jelly is a simple breakfast that can be made in a cast-iron pan in just a few minutes!

    The more often we go camping, the more I get to expand my campfire cooking repertoire. Especially if we're camping with a cooler!

    Figuring out that I can re-create typical meals that we'd have at home has been a game-changer for our outdoor adventures. We love having a hearty end-of-the-day meal like BBQ chicken quesadillas, a shrimp boil, or pesto penne.

    Some of my latest efforts have been in the breakfast category. Although our muesli and peanut butter granola will always be good standbys, campfire cooking in the morning gets our day off to an extra good start.

    This campfire French toast with peanut butter and jelly requires few ingredients and is a quick breakfast for hungry campers!

    What Equipment Will I Need?

    You'll need to bring a cooler for the eggs, milk (if you're using it), and butter. We like our Igloo BMX cooler for camping.

    You'll also need a cast-iron skillet and some basic utensils like a whisk and spatula. Bring a shallow bowl to scramble the eggs and dip the bread, and a tray or plate for assembling the French toast.

    How to Make Campfire French Toast

    Start by whisking together the egg and milk (or you can use water).

    Then you'll create sandwiches, using two slices of bread and layers of peanut butter and jam.

    Next, heat your cast-iron skillet with a little oil or butter over the campfire grate.

    Dip each of the sandwiches into the egg mixture so that they're covered on both sides.

    Cook the French toast in the skillet on one side for about three minutes, or until golden. (Keep a close eye on it, as it's hard to be precise about timing over a campfire!)

    When you're satisfied that the sandwiches are toasty on the bottom, flip them and cook the other side for about three minutes also, or however long it takes to reach golden brown.

    Remove the campfire French toast onto plates and serve immediately! Some maple syrup, honey, or fresh berries will top these off perfectly.

    Equipment

    • 10" or 12" cast iron skillet
    • bowl (to scramble eggs)
    • whisk or fork (to scramble eggs)
    • metal spatula
    • plates (to serve)
    • forks (to serve)

    Ingredients

    • 2 eggs
    • 4 slices bread of choice I like Italian loaf or sourdough. Use gluten-free bread if needed.
    • 1 tablespoon milk or water
    • 1 tablespoon peanut butter (amount variable)
    • 1 tablespoon jelly or jam (amount variable)
    • 1 tablespoon oil or butter
    • maple syrup or honey (optional)

    Instructions

    • Lightly whisk egg and milk (or water) in a bowl. The bowl should be large enough to dip bread in, so a shallow bowl works best.
      Spread desired amount of peanut butter and jam on 2 slices of bread and top with remaining slices of bread, creating sandwiches.

    • Add oil or butter to a cast-iron skillet and place on a hot campfire grate to pre-heat the pan.
      Dip each of the sandwiches briefly in the egg mixture; then place in skillet.

    • Cook French toast sandwiches on one side for about 3 minutes, or until golden. (Timing will vary depending on how hot your pan is.)
      Flip and cook the other side for about 3 minutes, until golden brown.

    • Optionally, drizzle with maple syrup or honey. Serve immediately while still hot.
