This chia seed parfait is made with chia seed and fruit compote, Greek yogurt and granola. It's perfect for a make-ahead breakfast or snack!

My favorite snacks include a little (or a lot of) protein. Like this kale protein smoothie, or some peanut butter granola.
And, for when you want a little more sweetness in the mix, this chia seed parfait with fruit compote.
This versatile combination can be either a nice breakfast, a snack, or a make-ahead road trip or camping recipe.

What Kind of Fruit Should I Use?
This parfait is perfect for spring and summer berries (such as strawberries, raspberries, blackberries, and blueberries) and cherry season, but it also works well with frozen berries.
Since frozen berries tend to be extra juicy when thawed, this recipe is perfect for them because the chia seeds help thicken up all that liquid.
I especially love a cherry compote and a blueberry compote, but use your favorite (or what you have on hand).
What Kind of Yogurt Should I Use?
I use a high-protein plain Greek yogurt, but you could use any yogurt you want to, plain or flavored.

How to Make a Chia Seed Parfait
To make the fruit compote, heat the berries or cherries on medium until they begin to release their juices.

You can mash the berries as they cook to help the process along. Once the liquid has started to boil, take it off the heat and add the lemon juice and chia seeds.
Stir the mixture well, and let it cool for about 10 minutes.

Next, add honey to your desired level of sweetness.

Your compote is now ready to either use, refrigerate or freeze.
When you're ready to make parfaits, you'll need some small jars or bowls. I like to use 8-ounce glass jars.
Start with a layer of yogurt, and then top with a spoonful of fruit compote and maybe a little more honey. Stop there if you won't be serving them right away. They'll keep in the refrigerator for about a week.

Once you're ready to eat, top them with a layer of granola and serve!
Chia Seed Parfait
Ingredients
Chia Seed Fruit Compote (Amount for 8 Parfaits):
- 2 cups berries or cherries Fresh or frozen
- 1 tablespoon chia seeds
- ½ lemon, juiced Approximately 1 tablespoon. Strain out any seeds
- 1 tablespoon honey Or sweetener of choice. Use more or less as desired
Parfait (Amount Per Parfait)
- ½ cup yogurt I use plain Greek yogurt
- ⅛ cup granola Or use muesli or cereal of choice
- extra honey Optional, use as desired
Instructions
Chia Seed Fruit Compote
- Add fruit to a small saucepan and heat over medium until fruit begins to release juices. You may want to mash the fruit with the back of a wooden spoon to help it break down.When the mixture is very juicy and has begun to boil, remove from heat.

- Add chia seeds and lemon juice. Stir well.

- Allow compote to cool for about 10 minutes. As it cools it will thicken. Taste and add honey to desired level of sweetness.You have should enough chia seed fruit compote for about 8 parfaits.If making ahead, refrigerate for up to a week or freeze for up to 3 months.

Parfait
- Add yogurt to a small bowl, parfait glass, or sealable glass jar.Top with about a tablespoon of chia seed fruit compote. Optionally, drizzle with honey. If making ahead, use a sealed container and store in the fridge for up to a week. Just before serving, top with granola.
