Instructions
Chia Seed Fruit Compote
Add fruit to a small saucepan and heat over medium until fruit begins to release juices. You may want to mash the fruit with the back of a wooden spoon to help it break down.When the mixture is very juicy and has begun to boil, remove from heat.
Add chia seeds and lemon juice. Stir well.
Allow compote to cool for about 10 minutes. As it cools it will thicken. Taste and add honey to desired level of sweetness.You have should enough chia seed fruit compote for about 8 parfaits.If making ahead, refrigerate for up to a week or freeze for up to 3 months.
Parfait
Add yogurt to a small bowl, parfait glass, or sealable glass jar.Top with about a tablespoon of chia seed fruit compote. Optionally, drizzle with honey. If making ahead, use a sealed container and store in the fridge for up to a week. Just before serving, top with granola.
Notes
Traveling + Camping notes: This recipe works well as a pre-made breakfast or snack for traveling or camping. If you don't have access to a fridge while traveling, make sure to store the parfaits in a very cold cooler.
