This campfire French toast with peanut butter and jelly is a simple breakfast that can be made in a cast-iron pan in just a few minutes!

  • 2 eggs
  • 4 slices bread of choice I like Italian loaf or sourdough. Use gluten-free bread if needed.
  • 1 tablespoon milk or water
  • 1 tablespoon peanut butter (amount variable)
  • 1 tablespoon jelly or jam (amount variable)
  • 1 tablespoon oil or butter
  • maple syrup or honey (optional)

Instructions

  • Lightly whisk egg and milk (or water) in a bowl. The bowl should be large enough to dip bread in, so a shallow bowl works best.
    Spread desired amount of peanut butter and jam on 2 slices of bread and top with remaining slices of bread, creating sandwiches.

  • Add oil or butter to a cast-iron skillet and place on a hot campfire grate to pre-heat the pan.
    Dip each of the sandwiches briefly in the egg mixture; then place in skillet.

  • Cook French toast sandwiches on one side for about 3 minutes, or until golden. (Timing will vary depending on how hot your pan is.)
    Flip and cook the other side for about 3 minutes, until golden brown.

  • Optionally, drizzle with maple syrup or honey. Serve immediately while still hot.
