Honey Cinnamon Latte
This honey cinnamon latte, or miel, is made with homemade honey simple syrup, espresso (or strong coffee) and steamed milk.

Honey Simple Syrup:
- 4 ounces honey
- 4 ounces water
Honey Cinnamon Latte:
- ½ ounce honey simple syrup Use more as desired. ½ ounce = 1 coffee shop "pump"
- 2 ounces brewed espresso (a double or doppio shot) Or substitute 4 ounces coffee, preferably French press
- 4 ounces steamed + frothed milk Dairy or non-dairy
- dusting of ground cinnamon
Honey Simple Syrup:
Add the honey and water to a small pot. Heat over medium-low heat until the liquid is hot and beginning to steam. (There is no need to bring the syrup to a boil.)Remove syrup and set aside to cool. (I like to wait at least 10 minutes to avoid adding hot syrup to the drink.) Store syrup in a glass jar (or airtight container) in the fridge. Use within a month. You should have enough syrup for 8 "pumps" (½-ounce servings).
Honey Cinnamon Latte:
Add half an ounce of the honey simple syrup (or more, if desired) to a coffee mug.Add the brewed espresso. Top with the warmed, frothy milk.Dust the top of the latte lightly with cinnamon.
Options for a stronger cinnamon flavor (pick one, not both):
- Add a cinnamon stick to the honey simple syrup while it warms, and allow the syrup to rest 10 minutes before using.
- Add a small pinch of ground cinnamon to the espresso after brewing, and whisk to dissolve.
