Gorgonzola Pizza with Jam Drizzle

Ingredients

11" thin crust pizza dough (NOT pre-cooked)
1
tablespoon
olive oil
2
ounces
gorgonzola cheese
5
ounces
mozzarella
(Just over half of one standard-size fresh mozzarella ball.)
2
tablespoons
fruit jam or jelly
Fig or blackberry jam recommended
2 sprigs fresh rosemary, removed from stem
Instructions
Preheat oven to 500ºF.
Brush pizza dough with olive oil.
Use a fork to crumble apart both cheeses.
Spread both cheeses on pizza dough in an even layer.
In a small bowl, mix jam with ½ TB of water, and stir until fig jam dissolves into a syrup. Add more water if it's still too thick to pour.
Drizzle jam mixture over pizza.
Tear rosemary into smaller pieces. Sprinkle over pizza.
Bake 6-7 minutes until crust has browned and cheese has melted.
Cut into 8 slices. Allow pizza to cool slightly before serving.
Notes
This recipe was written for a 12" pizza, but can be easily adapted for larger pizzas by increasing the amount of cheese and jam.
