These easy two-ingredient Kombucha Popsicles are the perfect cool treat on a hot summer day!
I’m writing this from my ‘recovery bed’ (a.k.a.– my living room couch). Two days ago (or, by the time you read this– a few weeks ago), I had to have dental surgery. (Again.) No surprises here– it didn’t feel great! Actually it hurt a lot, and I’ve spent the last two days watching movies, playing Super Mario on our old Nintendo, and staring at photos of food that I can’t eat right now, all while trying to stay chipper.
The husband has been dotingly bringing me green smoothies, lukewarm soup, and mashed potatoes. Some friends brought by more soup, soft cheese, and other easy-to-eat foods, and my cat tried really hard to be a ‘nurse kitty’ for about 5 minutes, before remembering that he needed to chase a bug.
Last night, I realized excitedly that I could finally open my mouth wide enough to lick a popsicle. (It’s the little victories– ya know?) What kind of popsicles? Kombucha popsicles!!! They’re easy to make– there are only TWO (that’s right– two!) ingredients, and they’re a healthy alternative to sugary frozen treats. If you’re a kombucha lover, keep reading!
Why Kombucha Popsicles?
First things first– if you don’t know what kombucha is, and want to read more, read my ‘How to Make Kombucha‘ tutorial. Basically, though, kombucha is a lightly fermented tea.
I make Kombucha Popsicles because they’re delicious. I also like that they’ve got less sugar than a traditional popsicle, and they’re a little tangy. The husband was totally unconvinced when I started making these popsicles, but then he tasted them, and now he eats them like candy. They’re yummy.
Are they healthy? I think so. They’ve got around 19 calories each* and natural probiotics, making them (in my opinion) a much better choice than most store-bought popsicles. Mostly, though– I just like the way they taste!
Making Kombucha Popsicles
The first thing you’ll need for Kombucha Popsicles is– clearly– kombucha. You can make your own kombucha, or buy it at the store. Either way works. I like to use a fruit-flavored kombucha for these popsicles, such as strawberry or cherry kombucha, but have fun with the recipe and experiment with your favorite flavors.
Next, you need berries. Use any berry you like– just make sure to cut them up if they’re not small berries. (Dice your strawberries, but you can leave blueberries alone.)
Next, loosely pack your berries into the molds.** My molds might be a slightly different size than yours, but I can fit about two average sized strawberries into one mold. Then, pour the kombucha over the berries to the fill line on your popsicle molds, and freeze them! Once they’re frozen, run a little hot water over the mold, and your popsicle should pop right out!

Total time does not include freezer time.
For EACH Popsicle: (See Recipe Notes)
- 2-3 berries, frozen or fresh (strawberries, cherries, or other fruit of choice)
- 3 oz fruit-flavored kombucha (such as strawberry, cherry, or peach)
- Popsicle Molds
Cut large berries into small pieces, and leave small berries (like blueberries) whole. Fill the mold with loosely packed berries to the fill line on the mold. Pour kombucha in next to the fill line. Repeat with any additional molds.
Freeze at least 2-3 hours. Run hot water on the outside of the mold, and pop the the popsicle out. Eat immediately.
Standard popsicle molds come in 4, 6, and 8 packs, and in various sizes. This recipe gives a general guide for what should go into one popsicle. Adjust and multiply as needed for your molds.
