This classic Cheesy Shrimp and Grits is made with cheesy stone ground grits, jalapeño peppers, and shrimp sautéed with beer.

All through college, I worked as a server at a ‘country-food’ restaurant, and all the breakfast meals came with grits.  When I wasn’t trying to master a fake Southern accent, or showing customers how to win the little peg game that tormented them during their meals, I was throwing away massive amounts of uneaten grits.  This was a minor tragedy, because I’m guessing most people didn’t even taste the grits before pushing them aside.

That said, some grits are most definitely better than others.  Some are “instant” (that means they’re partially pre-cooked), and can be cooked extremely quickly.  These grits can be useful, because they’re fast, but they don’t have the flavor and texture of stone ground grits.  Just like with instant oats versus steel cut oats, when it comes to texture and flavor, instant grits lose to stone ground grits every time.  One of my favorite ways to use stone ground grits in a meal is this Cheesy Shrimp and Grits.

Winter is still here, guys!  I keep telling it to go away, and the seasonally grey skies and periodic bursts of snow are still around.  Winter doesn’t care what I think.  This, of course, means that I’ve found myself making even more soup than usual.  Last week, I cooked homemade seafood broth, and my soup-obsessed brain decided it was time to make seafood stew.  My absolute favorite seafood soup is Clam Chowder (the creamy New England kind).  It’s the wonderful mixture of two food worlds– creamy and hearty potato soup, and flavorful seafood.  In short, it’s amazing.

Do you need a fancy recipe for date night?  A romantic dinner for two?  Are your in-laws or boss coming over for dinner, and you need to impress?  Periodically, Champagne Tastes will be featuring ‘Gourmet’ recipes.  These will still be budget friendly and relatively simple, but will help you confidently serve a gourmet meal without hiring a chef.

This week: Lobster Tails with Cayenne Butter Sauce.  “Lobster?!” you say? “I thought this was a budget friendly food blog!”  My response: If you’re on a budget and you want lobster, you better learn to cook it yourself (unless you live in New England, where I hear it’s cheaper. I don’t live in New England).  I will admit, I don’t decide to make lobster and go buy it- I watch for lobster on sale and then decide to make it.  Aldi’s will periodically get lobster tails that are 2 for $12, usually in the fall and winter.  (If you aren’t shopping at Aldi’s, read this post on why you should be).  Other grocery stores also will run sales on lobster (I usually just buy the tails- they have the most meat for the least amount of work).
