One of my favorite desserts is the French fruit dish clafoutis.  Pronounced ‘cla-foo-tee,’ this fluffy deliciousness doesn’t know whether it’s a cobbler, custard, or cake.  It’s full of indecision.  It will confuse guests who haven’t had it before, but they’ll inevitably decide they don’t care what it’s supposed to be, because it is just so tasty.

Traditionally, clafoutis is made with whole sweet cherries.  However, sweet cherries tend to be fairly expensive where I live, and when I buy them I usually devour them all gluttonously before I could even imagine putting them inside a dessert.  When I make clafoutis, I tend to use whatever berries I have on hand, but one of my favorite combinations is Strawberry Raspberry Clafoutis.

Do you ever have moments where you pause, and realize that if your younger self saw what you were doing, they’d be completely bewildered?  I have.  If you were able to travel back in time, and tell college-age me that one day I’d be growing and juicing my own wheatgrass, here’s what would have happened.  First, I’d have put down my Diet Cherry Vanilla Dr Pepper (gag) and my baked potato chips, and then I would’ve said, “What’s wheatgrass?”

What’s my point?  First of all, making my own homegrown wheatgrass juice reminds me that I’ve been slowly morphing from a city-loving, high heel-addicted fashionista into an herb garden-growing, nature trail-hiking foodie– and that confuses me.  Second, you don’t have to be a fabulously talented gardener to grow wheatgrass.  If you want to give it a try– this tutorial will show you how to grow your own wheatgrass, and then how to juice it without a juicer!

This Pi Day, celebrate with pie!  Eat your way through all 3.14 sides of this mathematical holiday with these deliciously round eats.

It’s almost here– the husband’s favorite “holiday”– Pi Day!  Pi Day is a mathematical celebration of all things round, a circular excuse to devour pizza, gobble down tarts, and most of all– eat pie!  If you’re confused, here’s the deal–  The mathematical symbol ‘Pi’ stands for the ratio of a circle’s circumference to its diameter, and it equals (approximately) 3.14.  (Actually, the number’s quite a bit longer than 3.14, but we’ll forget that for now.)  Math nerds everywhere, along with their math-indifferent food-loving friends (like me!), use this fabulous formula to celebrate pi with pie on the calendar’s closest equivalent to 3.14– March 14th!  And then we come full circle.

Confused?  That’s okay!  All you really need to know is that March 14th is a fantastic day to eat pie.  This Pi Day, celebrate with all things round– and especially with PIE!  Want inspiration?  Check out these circular eats!

This cold season has been rough.  Actually, that’s an understatement– it’s been ridiculous, and staying healthy has become priority number one.  Normally, throughout cold and flu season, I load up on those little vitamin C ‘immune-booster’ powder packets, and drink one every day.  Do I really think they work?  Not necessarily, but it made me feel like my immune system was protected with a lovely little layer of immune-boosting vitamins.  Plus, they’re tasty.  Recently, however, I looked up the ingredients list for my normal vitamin packets,* and was a little alarmed to see ‘fructose,’  ‘dried cane syrup,’ AND ‘corn syrup solids’ on the list.  I checked out a few other brands, and was just as startled.  With ingredients like that, how could those possibly help me to stay healthy?

Determined to boost my vitamin intake, I decided, radically, to get my vitamins from food.  (Are you shocked at my extremism?)  An orange might not technically have as much vitamin C as the immune-booster packets, and a banana has less vitamin B than you’d get from a supplement, but the vitamins are more potent and better absorbed when they come from real food.  This vitamin B and C packed Banana Orange Smoothie is a delicious, fast, and easy way to add a few extra vitamins to your diet.

A few months back, the husband’s family started gushing about a slow cooker Chicken Tikka Masala recipe they’d been making.  I won’t lie– I was suspicious.  Using a slow cooker seemed so… untraditional for a curry.  And then, I tasted the sauce.  I was sold.  Hook, line, and sinker– sold.  It was AMAZING, and I needed it in my life.  (But– I wanted it with veggies!)

This Slow Cooker Vegetable Masala is EASY– it has minimal prep work, and only a few steps to follow at the end.  My favorite part about this curry, and the reason I’ve been obsessed with it for the last few weeks, is that allowing the curry to cook slowly over several hours gives the spices time to come alive.  This slowly-cooked curry actually tastes better than the same recipe cooked on the stove top!

Today’s ‘Cooking 101’ tutorial: How to Cook Basmati Rice in the Microwave!  Follow a few easy steps and get fluffy, delicious rice in less than 20 minutes.

In my house, we go through a lot of basmati rice.  Sometimes we eat it with curry, sometimes with lentils, but I always– and I mean always— cook it in the microwave.  Actually, I cook all my rice in the microwave.  Why?  It’s easy, seemingly foolproof, and is ready in about 20 minutes.

I realize that this post won’t be helpful for everyone.  Some of you are ‘anti-microwave,’ others have rice cookers, and some of you probably cook rice on the stove top regularly without any issues.   Personally, I don’t use the microwave on a regular basis– except for rice.  If you’re ‘rice challenged,’ and have issues with rice sticking to the bottom of your pot when cooking– this post is for you.  If having multiple stove top burners going at once stresses you out– this recipe will let you put the rice in the microwave while dinner cooks on the stove.  If you’re simply looking for an incredibly easy way to fix your basmati rice– keep reading, because this post is for you too!
