This easy Chocolate Lava Cake is the perfect dessert for two!  Even if you aren’t a baker, you can definitely make this cake!

A few years ago, long before I met the husband, I went to Europe with my best friend.  Over the course of three sleep-deprived and fabulous weeks, we shopped in Paris, talked one another into buying ridiculous shoes, got lost in Dublin, missed trains, argued over boys, took ‘scary’ flashlight-lit selfies in the catacombs next to ancient skulls, met wonderful people, and of course– devoured amazing food.

Most of the mouth-watering delicacies we ate did NOT, in fact, come from the French restaurants that our tiny budgets couldn’t afford, but instead from the very sweet and generous couple we stayed with in Paris.  On our last night in Paris, our host Celine whipped out miniature lava cakes, or moelleux au chocolat.  This recipe is hers, with small adaptations that the husband and I have made over the years as we’ve baked up this sweet and decadent treat for two.

This Lemon Spinach Pasta with Mushrooms is a vegan-friendly dinner that’s ready in about 20 minutes!  

Who says healthy, delicious meals have to be time consuming?  I like to have several recipes that are incredibly easy and fast for nights when I simply do not have the time for a complicated dinner.  My goal for these recipes is that they take less time to prepare and make than it would take me to preheat the oven and cook a frozen pizza- about 20 minutes.  This recipe for Lemon Spinach Pasta is ready in about the time it takes you to make the pasta, because almost everything else is done while the pasta is cooking.  Simply heat water for pasta, add the pasta, and wilt your spinach into the garlic and lemon mixture while the pasta cooks.  Then, stir your cooked pasta together with the spinach mixture and add some shaved Parmesan cheese.  Simple and delicious.

Have you ever planned out a meal, made a (mental) list, gone shopping, only to realize as you begin to cook that you totally forgot to get at least one or two pretty important ingredients?  Desperation, however, leads to innovation.  That, my friends, is how this Lemon Ricotta Cheesecake was born!  I fully intended to make tiramisu, and had my fingers on some lady fingers and mascarpone, but totally forgot the wine and rum!!!  (No rum?!  No wine?! There will be no tiramisu!)

Instead, after scavenging my fridge and pantry– we had cheesecake!  This Lemon Ricotta Cheesecake is made from mascarpone, ricotta, yogurt, and lemon zest over a crust of lady fingers.  Top it all off with fresh strawberries and rhubarb syrup, and you’ve got a spring-tastic dessert!

Each spring, the woods behind our apartment turn white with honeysuckle blossoms, and it smells spectacular.  If you, like me, grew up eating the tiny, minuscule drops of ‘honey’ from these flowers, you may have also wished that you could somehow, possibly, get a bunch of these dainty flowers together and miraculously collect all of the sweet nectar.

I don’t know how many thousands (or millions) of flowers it would take to harvest a jar of honeysuckle nectar, and I’m not even sure it would be possible.  What I do know, however, is that you can preserve those delicious and edible flowers in vodka.  In doing so, you’ll infuse the vodka with both the delicate floral scent of the petals AND the taste of the nectar.  This Honeysuckle Vodka is a simple and easy way to savor these edible wildflowers.

Do you “glamp” instead of camp?  “Glamping”– or “glamour camping”– is a perfect way to “be one with nature,” but still feel fancy-schmancy.  That’s right– it’s how you can sleep in a tent, feel rugged and wild, but still not feel deprived or miserable.  Some people (like my friend Jaline) glamp by setting up giant tents filled with bed-like air mattresses, gorgeous rugs, and high-end lanterns.  Others (like me) stick with a simpler tent set-up, but refuse to compromise on the food.
