Last year, I fell in love.  Yes, that’s right– I fell head over heels for a fish.  Which fish?  Was it salmon that captured my heart?  Cod that gave me a giddy smile?  Trout that made me gush to all my friends?  No, no, and nope!  (Although I won’t lie– I love all those fish too!)  This time, it was ahi tuna that made my heart skip a beat, and I just can’t get enough!  It’s flavor-packed, it’s filling and meaty, and best of all– it’s EASY!  As in, ridiculously easy.  This Ginger Orange Seared Ahi Tuna is a take on the meatier Orange Chicken.  It’s marinated for ten minutes, cooks in about one minute (yes that’s right– ONE minute), and is topped off with a simple sauce made from the marinade.

This Seared Paprika Salmon with Cranberry Chutney is a show-stopping seafood centerpiece.  Both the salmon and chutney are ready, start-to-finish, in about 15 minutes.

I had a spicy Aha! moment recently.  A ‘where have you been all my life?’ pepper revelation.  About what?  Paprika.  Specifically, Spanish smoked paprika.  If you’ve only used regular paprika– listen up!  Stop what you’re doing, and go get some smoked paprika.  Seriously, it’s that delicious.  It’s like a little bit of ground-up heaven to sprinkle over your food.  If you love chipotle peppers, and haven’t been using smoked paprika– your mind will be blown.  (Or at least– mine was!)  This smoky, woodsy spice has less heat than chipotle, but all the flavor, which means you can use as much as your little heart desires.

At the moment, my favorite way to use smoked paprika is to sprinkle it all over salmon, sear the fish, and cover it with cranberry chutney.  In other words, I take three of my favorite things and throw them together in a pan.  And it’s magical.  This Seared Paprika Salmon with Cranberry Chutney is flavorful, gorgeous, and fast– making it perfect for both a dinner party centerpiece and for a quickly thrown-together weeknight meal.

Easy Basil Pesto Salmon- all you need is salmon, pesto, and seasoning.

I’ve been eating ridiculous amounts of salmon recently.  I just can’t stop myself– it’s delicious.  It’s flavorful, flaky, and filling.  Salmon is an easy and quick main dish on a busy night.  However, as amazingly tantalizing as perfectly cooked salmon is, it is also incredibly easy to overcook and dry out.  Few things in life are sadder, my friend, than hard, dry salmon.  (Okay sure, that’s not true.  A ruined dinner, however, is always a minor tragedy).  One way to make sure your salmon stays tender is to smother it in pesto.  That’s right- whether you make your own or buy it pre-made, this herb-filled sauce will lock in the salmon’s natural moisture and help make your fish perfect.  This recipe for Basil Pesto Salmon has 5 ingredients (6 if you include the lemons) and is incredibly flavorful.  My favorite part, the best part, is that it’s ready in 15 minutes.

A few years ago, I worked as a server at a ‘country-food’ restaurant, and all the breakfast meals came with grits.  When I wasn’t trying to master a fake country accent, or showing customers how to win the little peg game that tormented them during their meals, I was throwing away massive amounts of uneaten grits.  This was a minor tragedy, because I’m guessing most people didn’t even taste the grits before pushing them aside.

That said, some grits are most definitely better than others.  Some are “instant” (that means they’re partially pre-cooked), and can be cooked extremely quickly.  These grits can be useful, because they’re fast, but they don’t have the flavor and texture of stone ground grits.  Just like with instant oats versus steel cut oats, when it comes to texture and flavor, instant grits lose to stone ground grits every time.  One of my favorite ways to use stone ground grits in a meal is this Cheesy Shrimp and Grits.
