I’ve got a story– a tuna story.  Are you ready?  It’s exciting!  It has problem solving, excitement, and there’s even a lesson learned.  Last summer, the husband and I went on a hiking, camping, glamping, road trip ‘experience.’  Before we left, I started planning, and I had a problem.  A food problem, to be precise.  What, exactly, does one eat when you’re in a car, with no refrigeration or cooler, no microwave, no stovetop.  If peanut butter pops into your head– I agree– but not for three weeks!  My solution was tuna.  Actually, it was this Wasabi Asian Tuna Salad.

3 Seafood Stews from Orca Bay - Albondigas (Mexican Seafood Soup) from Orca Bay

3 Seafood Stews from Orca Bay – Albondigas (Mexican Seafood Soup) from Orca Bay

These three gourmet seafood stews for two from Orca Bay are ready in minutes, and deliciously perfect with practically zero effort.  This post is sponsored by Orca Bay, but as always, all opinions are my own.

I adore soup.  All winter long, I want soup as often as possible, in as many flavors as possible.  As much as I love homemade soup– sometimes I’m short on time,  sometimes I’ve run out of the ingredients I need for made-from-scratch soup, and sometimes I’m just looking for a quick and easy dinner solution.  What then?

It’s tempting to reach for canned or boxed soup (and sometimes I do), but I’m always a little worried with how much salt is in pre-made soup.  Orca Bay has another, much tastier, less salty solution.  What is it?  Frozen soup.  That’s right– soup that you buy in the freezer aisle.  These tasty concoctions have all the flavor, all the freshness, and all the deliciousness of a homemade soup.

How to Grow Mung Bean Sprouts

How to Grow Mung Bean Sprouts

Do you love adding sprouts to your soups, sandwiches, and salads?  This easy food tutorial will show you How to Grow Mung Bean Sprouts!

First of all, what are mung bean sprouts?  Sprouts are formed when seeds start to ‘sprout’ into a full vegetable.  Mung bean sprouts are… (wait for this)… sprouts from mung beans!  They’re a delicious, vegetarian source of plant-based protein.  You’ve probably eaten them (or at least seen them) if you’ve eaten Pad Thai or the Vietnamese soup Pho.  If you’ve seen an Asian or Asian-inspired recipe that calls for ‘bean sprouts,’ it probably meant mung bean sprouts.  These tasty veggies are crunchy, delicious, and incredibly easy to grow at home.

Slow Cooker Vegetable Masala

This vegan-friendly Mint Tea Hot Toddy hot cocktail is the perfect "get well" drink for for cold winter days.

Slow Cooker Vegetable Masala

This vegan-friendly Slow Cooker Vegetable Masala is a delicious and easy Indian curry that needs 5 minutes of prep work, and 4 – 8 hours to slowly cook through.

A few months back, the husband’s family started gushing about a slow cooker Chicken Tikka Masala recipe they’d been making.  I won’t lie– I was suspicious.  Using a slow cooker seemed so… untraditional for a curry.  And then, I tasted the sauce.  I was sold.  Hook, line, and sinker– sold.  It was AMAZING, and I needed it in my life.  (But– I wanted it with veggies!)

This Slow Cooker Vegetable Masala is EASY– it has minimal prep work, and only a few steps to follow at the end.  My favorite part about this curry, and the reason I’ve been obsessed with it for the last few weeks, is that allowing the curry to cook slowly over several hours gives the spices time to come alive.  This slowly-cooked curry actually tastes better than the same recipe cooked on the stove top!

Love rice? Today's 'Cooking 101' post- How to Cook Basmati Rice in the Microwave!

Love rice? Today's 'Cooking 101' post- How to Cook Basmati Rice in the Microwave!

How to Cook Basmati Rice in the Microwave

Today’s ‘Cooking 101’ tutorial: How to Cook Basmati Rice in the Microwave!  Follow a few easy steps and get fluffy, delicious rice in less than 20 minutes.

In my house, we go through a lot of basmati rice.  Sometimes we eat it with curry, sometimes with lentils, but I always– and I mean always— cook it in the microwave.  Actually, I cook all my rice in the microwave.  Why?  It’s easy, seemingly foolproof, and is ready in about 20 minutes.

I realize that this post won’t be helpful for everyone.  Some of you are ‘anti-microwave,’ others have rice cookers, and some of you probably cook rice on the stove top regularly without any issues.   Personally, I don’t use the microwave on a regular basis– except for rice.  If you’re ‘rice challenged,’ and have issues with rice sticking to the bottom of your pot when cooking– this post is for you.  If having multiple stove top burners going at once stresses you out– this recipe will let you put the rice in the microwave while dinner cooks on the stove.  If you’re simply looking for an incredibly easy way to fix your basmati rice– keep reading, because this post is for you too!

Vegan + Vegetarian Recipes to Feed a Cold

Recipes to Feed a Cold

This cold and flu season, keep yourself hydrated and fortified with these vegan and vegetarian Recipes to ‘Feed a Cold.’

Have you stayed healthy this winter?  I sincerely hope so.  However, after seeing news stories about ‘epidemic flu levels,’ after looking unsuccessfully in store after store for generic Mucinex and finding that EVERY SINGLE STORE was sold out, and after spending several days looking suspiciously at each person who coughed in my general direction–  I’m fairly sure that I’ve been exposed to some epic germs.

If you, like me, caught one (or one million) of those germs, these Recipes to ‘Feed a Cold’ will help soothe your throat, fill you with nourishment, and ease your way back onto the road to health.  Both the drinks and foods listed are filled with healthy ingredients like onions, ginger, turmeric, and garlic.  Some of these recipes aim to boost your immune system (like this green smoothie or this elderflower-turmeric tea), and others to calm an angry throat (like this hot toddy).  Some of these recipes are here to help clear your sinuses (like this onion and garlic ‘get well soup’ and this spicy noodle soup), and others will help fill you with wholesome ingredients as you heal.

I tried Bright Cellars new Monthly Cheese Club, and here's what I thought!

Bright Cellars Review – Monthly Cheese Club

If gourmet cheese delivered straight to your door sounds like a dream come true, dream no more!  Bright Cellars Monthly Cheese Club sends you four cheeses a month, custom picked for you!  I tried it for a month, and here’s what I thought.  Note: Bright Cellars sent me their cheeses in exchange for my honest review.

Calling all cheese lovers!  Listen up!  There’s a new cheese delivery service in town, and I’m kind of excited about it.  Here’s why– I cannot even BEGIN to tell you how many times I’ve stared in confusion at the bazillions of cheese options in the grocery store.  It’s the worst when stores have cooler after cooler of cheeses with exotic-sounding names from far-off locations, but the confusion also happens in smaller stores.  As much as I want to be an expert on all things cheese, the selections can be overwhelming.  Bright Cellars is here to help.

(If you read “Cheese Club,” and are already sold, go ahead and take the CHEESE TASTE QUIZ!)

Keep reading– Bright Cellars also sent me a coupon for you!

Has the winter weather taken its toll on you this year?  Have you made it through cold and flu season unscathed?  We haven’t.  In fact, this winter has been a little bit rough.  Between the two of us, the husband and I have managed to catch what seems like every cold virus coming and going.  We’re on the mend now (again), but I know some of you are still trying to get better.  When you aren’t buying tissues, making soup, and watching movies– there’s something else you should do.  You should make this Mint Tea Hot Toddy.
