This recipe has a story– a long, twisted tale of pizza goodness.  It all started a few years back, when I was just out of college, and shockingly, shockingly, couldn’t find a well-paying job for my studio art degree.  You’re all shocked too, right?  At any rate, I ended up (briefly) with the slightly mind-numbing job of entering health insurance data while sitting in a dark cubicle.  To pass the time, I flipped through the waiting-room magazines.  Whenever I’d find a recipe I liked, I’d have a little cubicle happy-dance.  Well, friends, that’s when I found a recipe for a Savory Apple Pizza.  Quite honestly, I have absolutely no idea what magazine it was in, and over the years this recipe has morphed into an entirely different pizza, but that’s where it began.  This Savory Apple Pizza has become a dinner and pizza party favorite.  It’s topped with gorgonzola, mozzarella, sautéed apples, pecans, and finished off with a delicious drizzle of fig jam sauce.

Hello campers, hikers, and adventurers!  If you’re planning on cooking outdoors soon, and want to catch up on any of the ‘Glamping’ recipes from my trip Out West, click here!  This past summer, when I wasn’t hiking into canyons and sleeping under the stars, I was eating.  We cooked most of our own food along our route, but I found out something about campground cooking– it’s HOT.  Standing over a campfire or camp-stove to prepare a meal was just fine in the mountains of Yellowstone, but when we got to the desert in Utah, I was over it.  I wanted something fast, with minimal heat exposure, so that I could go dive into a pool.  The solution to my dinner dilemma?  Burritos.  These Bean Burritos with Chipotle Peppers are flavorful, protein-packed, and are ready start-to-finish in about 10 minutes.  Best of all, only a few minutes are spent standing over the heat.

This Beluga Lentil salad is easy to prepare, vegan, and the perfect warming dish for fall and winter.

Have you noticed my lentil obsession?  I’ve been on a lentil-cooking crusade lately, scouring the area to find as many kinds of lentils as possible.  I’ve eagerly devoured red lentils, French green lentils, regular green lentils, and now– black Beluga lentils.  This Beluga Lentil Salad is vegan, easy to prepare, and only uses 10 ingredients.

These special, tiny little lentils get their name because, at a glance, they look like Beluga caviar.  Unlike the pricey fish eggs, black Beluga lentils are extremely affordable, fairly easy to find, and are perfect for both busy weeknight dinners and fancier gourmet-style meals.  You could, of course, attempt to pass these lentils off as caviar to unsuspecting guests at a dinner party.  It would be hilarious, and your faux-roe ruse will either last less than a second, or make everyone think you’re able to afford a heaping bowl of caviar.  The jig might be up when they remember they’re sitting in your teensy apartment and not a rambling mansion.  In any case, your guests will be thrilled with the lentils, because they are fantastic.

Camping trips can leave you full of dilemmas– You’re starving, you’ve been hiking all day, and yet just as you want one of the biggest, most filling meals ever, you find yourself without electricity, refrigeration, or even an oven.  What’s a hungry hiker to do?!?!  I’ll tell you what you’re going to do– you’re going to eat!!!  With a little planning and preparation– you can find yourself chowing down on lasagna.  This recipe for Campfire Spinach Lasagna is vegetarian, simple to prepare, and delicious.  It’s also a fantastic way to eat a few more carbs than normal, especially before or after a big hike.  We devoured this tasty pasta dish the night before our hike into the Grand Canyon, and managed to eat the entire batch all by ourselves.

A few months back, the husband started gushing about nature.  That’s right, he wanted to go camping.  To be more specific, he wanted to go on an epic, multi-week, national park-hopping, cross-country hiking and camping trip.  While I admitted that this sounded amazing (and exhausting), I had never been camping before.  Ever.  That’s right– he was taking this city-diva into the wilderness.  To be honest, I wasn’t incredibly worried about sleeping in a tent, or showering in a bath-house, or getting a little dirty.  My main worry was, you guessed it– the food!  I assumed (correctly, I might add), that a lot of the national parks are fairly isolated, with limited restaurant access.  We decided, of course, to go anyway and make it work.  What followed was a whirl of food planning, trip planning, and then eighteen days of driving, hiking, and delicious campground cooking.
